In the recipe Poached Chicken with Lardons and Lentils, do I have to double all the quantities in the recipe for 2 people?

Nigella's Chicken With Lardons And Lentils (from KITCHEN) is a one-pot comfort dish, where the chicken is poached while sitting on top of the lentils, bacon and aromatics. The chicken creates a broth as everything cooks, helping to flavour the lentils.
Nigella would serve this on its own in a bowl for one person. If you want to make the dish for two people, then it depends on whether you want to serve it on its own or with something like a green salad alongside. If you are serving the dish on its own then you should double all the ingredients, though you could probably use only 100g/4 ounces of lardons for two people, if you prefer, and just remember to taste and season the dish before serving. If you wanted to serve the chicken with another side dish then you could cook two chicken supremes (or 4 thighs) and just one quantity of the lentils and other ingredients. However, for both options you need to make sure that you have a saucepan that fits all of the chicken in a single layer on top of the lentils, as if the chicken is not sitting in the cookiing liquid then it will not cook evenly.
