Nigella's Creme Caramel For One (from COOK, EAT, REPEAT is an indulgent solo treat that can be easily scaled up to make more. The custard needs overnight chilling but can be stored in the fridge for up to 3 days.
The creme caramel should be left in the dish or mould until you are ready to eat it. It is very tender, so it needs to be turned out onto the plate it is being served on. Also, if it is removed from the mould then it will be vulnerable to damage in the fridge. In addition, if the creme caramel is left to stand for too long once turned out, it can start to collapse under its own weight as it is a quivering set rather than a very firm set. When the creme caramel is in the fridge in its mould, you should cover the top tightly with food wrap and keep it away from any strong-smelling foods, as custards can tend to absorb flavours of other foods. Remove the creme caramel from the fridge 30 minutes before you want to eat it so that it loses some of the fridge chill, which can blunt the flavours.
