Full question
I have made the Brownies several times, it is the most delicious recipe I have tried by far! The recipe says 25 minutes of baking but mine take at least 45 minutes in the oven. Nigella's oven must be on steroids, how on earth were her brownies baked after 25 minutes? Mine was like a lava cake in the middle.
Our answer
Nigella's Brownies (from HOW TO BE A DOMESTIC GODDESS) is a fairly classic brownie recipe with walnuts. The texture of baked brownies is quite a personal thing, but Nigella likes her brownies to be squidgy and fudge-like. Hence the baking time of about 25 minutes.
When the brownies are done, a cake tester inserted into the centre should come out with damp crumbs attached, though not completely uncooked batter. As the brownies cool they will set and you should not remove the brownies from their pan until completely cold. If the brownies are uncooked in the centre after 25 minutes, return then to the oven for a further 3 minutes and check again and continue to bake and check as needed. It is better to check early and frequently, rather than risk an overcooked brownie. If the cake tester comes out clean then the brownies will likely be heavy and more cake-like, rather than squidgy.
