How Many Cardamom Seeds For Apricot Almond Cake?

Asked by Malineri. Answered on 20th May 2016

Full question

I'll be making the Apricot Almond Cake and want to know approximately how many cardamom seeds there are in a pod? I live in Sweden where cardamom is sold by seed rather than by pod.

Our answer

Nigella's Apricot Almond Cake With Rosewater And Cardamom (from SIMPLY NIGELLA) uses two cardamom pods that are bruised and then added to the dried apricots as they poach. The husks of the cardamom pods are removed after poaching, leaving just the seeds in the cake batter.

A cardamom pod contains approximately 10 seeds, so you would need about 20 seeds (approximately 1/16th of a teaspoon) for the cake. However as the pods also contain some flavour (which is infused into the apricots as they cook) you may want to add a couple of extra seeds if you are using the seeds only.
