The Lemon Meringue Cake looks delicious, but should I line the sandwich tins with baking parchment first?
Our answer
Nigella's Lemon Meringue Cake (from FEAST) has a thin sponge cake layer that is topped with meringue. The cake layers are sandwiched together with whipped cream and lemon curd. If possible, use loose-bottomed sandwich tins or springform pans. as the delicate meringue on top of each sponge layer makes it slightly more difficult to turn the cakes out of the tins.
The recipe does suggest to line and butter the cake tins and we would suggest using baking parchment (parchment paper) as it is non-stick and will make it easier to remove the cake from the base of the tin. You could also line the sides of the cake tins if you are worried about damaging the meringue layer when you remove the cake layers from the tin. If you do line the sides of the tins, we suggest buttering the sides of the tin first, as this helps the parchment to stick to the sides of the tin. Alternatively, use a palette knife or thin-bladed metal spatula to loosen the sides of the cake away from the tin before removing the cake layers.
