Hi, I live in a hot country. I would like to know how long the Chocolate Sheet Cake will keep for in very warm conditions.

Nigella's Chocolate Sheet Cake would normally keep for 5 to 7 days if it is tightly covered and kept in a cool place. However, as it is quite a moist cake, it will spoil more quickly if it is in a very warm environment. We would suggest keeping the cake at room temperature, tightly covered, for one to two days and in the fridge for up to 5 days.
If you have to refrigerate the cake then you may find that some condensation forms on the top of the icing and it is slightly more sticky, but it is still fine to eat. We would also suggest that you remove slices of cake from the fridge about 30 minutes before eating so that the cake can come back to room temperature, as when chilled the cake's flavour and sweetness can be slightly muted.
