In Andy's Fairfield Granola are there substitutes for the apple sauce and sunflower seeds?
Our answer
Andy's Fairfield Granola (from Feast and on the Nigella website) is made with a combination of nuts and seeds and is also made with apple sauce/apple puree/apple compote. For the sunflower seeds you can use any seeds that you prefer and are available, such as pumpkin seeds, linseed or extra sesame seeds, or you could add some extra almonds or another raw nut at the end.
Unfortunately it is not possible to substitute the apple sauce as the granola will be too sweet if you use extra sugar or syrup. It is however fairly easy to make your own apple puree by peeling, coring and slicing apples (we would suggest 500g, or 3-4 apples) and cooking them, partially covered in a medium saucepan, over a low heat until the soften and can be easily mashed. Cool the sauce before measuring out the correct quantity and using. Leftovers can be refrigerated for up to 5 days and eaten with yogurt, or dolloped on top of the finished granola.Granny Smith is a good type of apple to use and can be found in many countries. If the cooked apple is very sour then add a little sugar to sweeten it before using.
