Full question
In Nigella's Lamb Ribs recipe there are nigella seeds. What are they, and do they have any other names? Thank you, Heather
Our answer
Nigella's Lamb Ribs with Nigella and Cumin Seeds (from Simply Nigella and on the Nigella website) coats the ribs in a soy and garlic glaze that is studded with nigella and cumin.
Nigella seeds are most commonly found in Indian dishes and also some Middle Eastern dishes and Eastern European baking. They have a unique flavour, slightly bitter and oniony. Nigella is the western name for them but you may also find them labelled under the Indian name of kalonji and in some other places as charnushka. You can usually find them on-line or you may also find them in Asian food stores. If you can't find nigella seeds then black onion seeds would be the closest alternative, but the flavour is not the same.
