Lemon Pavlova With Other Fruit Curds

Asked by Mrs Bevlar. Answered on 7th February 2020

Full question

I have made the Lemon Pavlova, which is so good. Could I substitute the lemon juice, curd etc. for orange for a different flavour? Many thanks.

Our answer

Nigella's Lemon Pavlova (from SIMPLY NIGELLA) uses lemon zest in the meringue and a lemon curd for the topping. The slight acidity of the curd balances the sweetness of the meringue and marries well with the whipped cream. It is possible to use other fruit curds. Regular orange curd lacks the acidity of lemon curd and may overall be a little too sweet, but it would be fine to use orange curd if that suits your taste.

Lime curd would be an option to consider. Or you could add a little lime juice to an orange curd to sharpen it slightly and make it more like a Seville orange curd. We would also recommend trying passionfruit curd, either store bought or home-made using Nigella's Passionfruit Curd recipe.
