Liquid Stock Concentrate

Full question

Several of Nigella's recipes use concentrated stock liquid and I have also used it for ages since Nigella first mentioned it. Unfortunately it is being discontinued and I don’t know what to replace it with. Any suggestions?

Our answer

Concentrated liquid stock is used in some of Nigella's recipes, such as Kerala Fish Curry, Thai Noodles With Cinnamon And Prawns and Curry In A Hurry. The concentrate was easy to blend into recipes without adding too much extra liquid and was easy to use in small quantities.

A good quality stock cube or stock powder, depending on what is available in your area, would be the best alternative. The stock concentrate used 1 1/2 tablespoons to 500ml of water and this is roughly equivalent to one stock cube (for most brands). Powders vary in strength so you should check the packaging for guidance. You may need to dissolve the cube or powder in a little boiling water before using it.
