Can you make the Nigellan Flatbread ahead of time? Or freeze the dough?

Nigellan Flatbread (from HOW TO BE A DOMESTIC GODDESS) is made with a yeasted dough. It is possible to make the dough a day ahead and let it do its first rise in the fridge. Once the dough has been kneaded and covered, put the bowl in the fridge for up to 24 hours. About 1 1/2 hours before you want to cook the flatbreads remove the dough from the fridge, divide into 6 and shape the flabreads. Cover with tea towels and leave in a warm place for about 1 hour, until puffy, then bake as directed. The flatbreads may rise more quickly if it is a very warm environment so keep an eye on them.
You can also freeze the shaped flatbreads. After the first rise shape the breads and put them onto a baking sheet that is lined with baking parchment (parchment paper). Freeze until solid then transfer to a resealable container or a tightly sealed freezer bag and freeze for up to 1 month. When you want to bake the breads remove them from the freezer and put on a greased baking sheet. Cover with tea towels and leave in a warm place. The flatbreads should take 2-3 hours to defrost and become puffy but the exact timing will depend on the temperature of the room so start checking them after 1 1/2 hours. Bake the flatbreads as directed.
