Hello! Can I bake the Brownies the day before or can I prepare the batter for the Brownies one day ahead?

Our answer

Nigella's Brownies (from HOW TO BE A DOMESTIC GODDESS) are soft, slightly squidgy brownies. It is possible to make them in advance, though we would suggest baking them as soon as the batter has been mixed as if you make the batter too far in advance it needs chilling and baking the brownies from cold will affect how they bake. Also the Brownies need to cool completely before you remove them from the tin, so baking them a day ahead can be quite helpful as you have time to let them cool.

You can bake the brownies, let them cool and then wrap the tin with food wrap, or put in a large airtight container and leave them overnight. Cut and remove the Brownies from the tin before serving. Alternatively cut the Brownies when cold and store the slices overnight in an airtight container. They will keep for 5 days. The brownies can also be frozen for up to 3 months (if a whole slab) or 1 month (individual slices). Wrap the slab in a double layer of food wrap and a layer of foil or put the individual brownies in an airtight container. Defrost for 2-3 hours at room temperature.
