Mini Meatloaves Without Oats

Asked by NibblingNomad. Answered on 2nd October 2014

Full question

Hi, can I substitute the oats in the Mini Meatloaves recipe? I have a family member who cannot eat oats. Thanks!

Our answer

Nigella's Mini Meatloaves recipe (from Nigella Express and on the Nigella website) are made with a combination of sausagemeat and beef, plus steak sauce and rolled (quick cooking) oats. The steak sauce adds a lot of flavour but also extra liquid, so the oats are added to help to absorb some of this liquid and to help to bind the mixture together.

If you can't use oats then breadcrumbs are usually used in meatloaf. You can use fresh breadcumbs but as the breadcrumbs need to absorb liquid it may be better to use dried breadcrumbs (a natural, unseasoned type). You should use the same amount as for the oats (80g, or 1 cup dried breadcrumbs).
