Full question
Hi, I have made the Quadruple Chocolate Loaf many times and love it. I would like to make mini loaf cakes using this recipe. Can you advise how to calculate the cooking time and oven temperature? Thank you!
Our answer
Nigella's Quadruple Chocolate Loaf Cake (from FEAST is a dense chocolate loaf cake that is soaked with a chocolate syrup and scattered with shaved chocolate. It is made in a 900g/2-pound loaf tin (for dimensions of the tin see the recipe method). We suspect that this cake would convert into smaller versions and usually this size of tin will convert to 8-10 mini loaves.
We would suggest leaving the oven temperature at 170c/325F when baking the smaller versions and the cakes are likely to take 25 to 30 minutes to bake. But as pan sizes and ovens vary we suggest checking initially after 20 minutes. The loaves are baked when risen, firm to the touch and when a cake tester inserted into the centre of the cakes comes out clean. For the larger loaf version the tin is lined with greased foil. For the mini versions you may find mini loaf liners, otherwise try to line the sections of the mini loaf pan with foil, pushing it well into the corners of each section, and then brush the foil with a little melted butter or flavourless vegetable oil. Make the syrup while the cakes are baking and use a teaspoon to carefully spoon the syrup over the cakes once they come out of the oven. We would also mention that as we have not tested the cake in this form we cannot guarantee the results.
