The Moroccan Vegetable Pot was good but the sauce was a bit thin and watery. Not sure what I did wrong and maybe I could have cut the vegetables in larger pieces. Also can I thicken the sauce a bit?

Nigella's Moroccan Vegetable Pot is a vegetable stew flavoured with cinnamon, cumin, ginger and saffron and sharpened with preserved lemons. These combine to make a flavourful broth rather than a thickened sauce and the stew is cooked with a lid on to make sure that not too much liquid evaporates. The vegetables don't really thicken the sauce and should be cut into bite-sized pieces, but if you cut them into larger pieces then you may find that they take longer to cook.
The vegetables are served with Couscous With Pine Nuts And Dill as the couscous is a perfect vehicle to soak up all of the aromatic stock, hence we do not particularly recommend thickening the sauce in this recipe. You could also serve the stew with rice instead of couscous.
