Can I make Old-Fashioned Chocolate Cake in a deeper cake pan, as one cake instead of two?
Our answer
Nigella's Old-Fashioned Chocolate Cake (from Feast and on the Nigella website) is a chocolate sponge cake that is baked in two 20cm (8-inch) cake or sandwich pans. Baking in two pans has the advantage of a shorter cooking time and not having to split the cake by hand to fill the centre with the rich chocolate icing.
It is possible to bake the cake as one in a 20cm (8-inch) deep cake pan or springform pan. However it is more difficult to bake the cake evenly. We would leave the oven temperature at 180c/350F and suggest that you grease the pan and line the base with a circle of baking parchment (parchment paper). The baking time should be about 50 minutes to 1 hour and when done the cake should be firm to the touch, the sides should be shrinking away from the sides of the pan and a cake tester inserted into the centre should come out clean. However we would emphasise that we have not tried baking the cake in this type of pan ourselves so cannot guarantee the results.
