Our answer

One-Pan traybakes, such as Nigella's Chicken And Pea Traybake (from AT MY TABLE) are usually baked on rimmed baking sheets (also called oven trays) or shallow-sided roasting tins. This type of pan exposes the skin of the chicken to the heat of the oven, so that it becomes bronzed and crisp. At the same time the juices from the chicken drip on to the vegetables in the pan below, adding flavour and moisture.

The actual size of the pan varies according to the recipe, but the pans should have sides that are approximately 2cm deep. The Chicken Traybake With Bitter Orange And Fennel uses a large pan approximately 46 x 34cm (for the US this is a half sheet pan), but if you are looking to buy a specific pan then we would suggest buying one or two slightly smaller pans of approximately 38 x 28 cm (for the US look for a quarter sheet pan) as the recipes that require a larger pan can usually be split between two smaller pans.
