Red And Green Thai Curry Paste

Full question

A couple of recipes in my Nigella Express book use red curry paste. Could I use green curry paste instead without changing any of the other ingredients?

Our answer

Nigella uses good quality store-bought curry pastes in NIGELLA EXPRESS for recipes such as Red Prawn And Mango Curry for speed and convenience. The pastes can usually be stored in the fridge for a reasonable amount of time and add heat and spice to a variety of dishes.

Unfortunately we can't recommend substituting green Thai curry paste for red Thai curry paste, as the two have very different flavour profiles. Red curry paste is usually made with dried red chillies, spices such as turmeric and often shrimp paste and are usually quite hot. Green curry paste is usually made with fresh green chillies and aromatics such as fresh coriander (cilantro) and tend to be less hot than red pastes, and also slightly sweeter. If you have green curry paste and are looking for dishes to use it in then we would suggest Curry In A Hurry or Spinach And Coconut Soup.
