Regular Flour Instead Of Buckwheat

Asked by Aqh28. Answered on 18th June 2016

Full question

Can the Triple Chocolate Buckwheat Cookies be made with regular flour? I can't find buckwheat!

Our answer

Nigella's Triple Chocolate Buckwheat Cookies (from SIMPLY NIGELLA) are made with buckwheat flour. Buckwheat flour is gluten free which gives quite a tender cookie, but the buckwheat also has a slightly nutty, smoky flavour that complements the chocolate.

However it is possible to use regular plain (all-purpose) flour as an alternative, though this will contain gluten. You would use the same weight (or cup measure) as for the buckwheat flour. Beacuse of the gluten in the plain flour the cookies may be slightly crisper than the buckwheat version, but still delicious.
