Roasted Peppers For Sausages With Beans

Asked by Chipper. Answered on 20th May 2021

Full question

For the Sausages with Beans and Peppers, are the peppers the long red roaster peppers (pimentos) I have seen from Spain or Portugal? Or do I have to roast red bell peppers myself?

Our answer

Nigella's Sausages With Beans And Peppers (from NIGELLISSIMA) is a one-pot Italian-inspired sausage stew. The sauce includes roasted red peppers as the peppers provide a smoky sweetness. The peppers used in the recipe come from a jar and are already cooked, for convenience. You can usually find jars of the roasted peppers in the tinned (canned) foods section or in the "speciality" section of supermarkets with other antipasti items, or you may also be able to buy them from some deli counters. You can also sometimes find roasted red peppers sold frozen. These can be used for the recipe but they need to be thawed before using.

The fresh long, red sweet peppers from Spain and Portugal ("pimento" or "pimiento" is the Spanish word for "pepper") can be used but they would need to be roasted first. You can also roast regular red (bell/sweet) peppers. If you want to roast your own peppers then we would suggest following the instructions in Nigella's Peppers With Feta And Almonds. The amount in this recipe is likely to make more than the 180g ( or 6 ounces/approx. 1 cup), drained weight of the jar of roasted red peppers, needed for the recipe, but the leftover roasted peppers can be stored in the fridge for up to 5 days and used in salads, soups and pasta dishes.
