Full question
Hello, years ago, I saw an episode of Nigella Bites where Nigella made this delicious salmon curry. The steam was coming off of the finished dish and it looked perfect for a cold night (like the ones here in New York). I've never been able to find this particular recipe, I'd love to make it. It was in a red sauce. Thanks so much!
Our answer
Nigella has several recipes for seafood curries, but we suspect that the recipe being referred to is Nigella's Thai Yellow Pumpkin And Seafood Curry (from NIGELLA BITES). The golden-red colour of the sauce comes from a combination of Thai red curry paste and ground turmeric. As well as salmon the curry contains prawns (shrimp), pumpkin and pak choi, so it is a hearty meal in one bowl. The curry is also very quick to make and although the ingredients list looks a little long, most of the ingredients can be stored in the freezer or store cupboard.
We would also suggest a couple of other warming and speedy curry recipes that are perfect for the colder weather. Nigella's Red Prawn And Mango Curry also contains cubes of sweet potatoes. The Keralan Fish Curry can be made with any firm white fish and has a hot and sour sauce, tempered by creamy coconut milk.
