Basque Burnt Cheesecake - please recommend alternative to the liquorice sauce. No one in our family likes liquorice but I am racking my brains to find something. Help!
Our answer
Nigella's Basque Burnt Cheesecake With Liquorice Sauce (from COOK, EAT, REPEAT) is a crustless cheesecake that is cooked quickly in a relatively hot oven, giving a burnished top and soft, luscious interior. Nigella serves the cheesecake with a liquorice sauce but in the introduction to the recipe she mentions that the cheesecake is also good with a few fresh berries on the side and omitting the sauce.
You can also serve the cheesecake with any sauce that will compliment the creamy but not too sweet flavour. Nigella suggests a rhubarb compote, which usually creates its own pink syrup to drizzle over the cheesecake. In COOK, EAT, REPEAT there is a Blood Orange Syrup that would also be a delicious partner. A slightly sharp blackberry, raspberry or passionfruit sauce would also be a good foil and a trickle of smoky maple syrup or mild orange blossom honey could also be an alternative if you want something sweeter.
