Storing Roquamole

Will the Roquamole be OK if made it in advance and kept it in the fridge? Thanks.

Our answer

Nigella's Roquamole (from NIGELLA EXPRESS) is a rich, dense and creamy dip made with avocado and Roquefort (or St Agur) blue cheese. Unfortunately even though the ingredients include sour cream (which is slighty acidic) the avocados in the dip can tend to turn black as they stand, so we do not recommend making it too far in advance.

If you make the dip up to an hour ahead of serving then you should transfer the dip to a bowl, press a piece of clingflilm (plastic wrap) on to the surface of the dip, making sure that none of the dip is exposed to the air, and store in the fridge. You may get a slight discolouration on the surface after this short time but this can be scraped off with a spoon or stirred in to the rest of the dip. Leftovers of the dip can be kept in the fridge for up to 2 days with clingfilm pressed on to the surface. The dip will be fine to eat but the colour could be a little unappetizing.
