Can the Vanilla Shortbread be made ahead and stored in the freezer?
Our answer
Nigella's Vanilla Shortbread (from NIGELLA SUMMER) will keep well in an airtight container in a cool place for 5-7 days. The shortbread can also be frozen once it has been baked.
When the shortbread is completely cold, layer the slices in airtight containers with pieces of baking parchment (parchment paper) in between the layers and freeze for up to 3 months. We would prefer to use rigid airtight containers rather than bags for the shortbread as it is a little delicate and could break up if it is in a bag and knocked or crushed in the freezer. To thaw the shortbread, put the slices on a wire rack at room temperature for about an hour, then transfer to an airtight container and eat within 5-7 days.
