I had planned to make the Strawberry Meringue Cake for a party, but I have no time to do a test run. Could I make the Lemon Meringue Cake instead and fill it with strawberries? I have made the Lemon Meringue Cake with huge success, but not sure if it would work with strawberries.

Nigella's Strawberry Meringue Layer Cake (from FOREVER SUMMER) has two layers that consist of a soft sponge disc topped with a pavlova-like meringue. These are sandwiched with whipped cream and strawberries just before serving. The recipe gives an oven temperature for a conventional oven and if you have a fan or convection oven then you will need to reduce the heat by around 20c (or follow the instructions in your handbook) and the cooking time may be shorter. Also use deep springform cake tins as the sponge and meringue can rise up a fair bit and if the meringue rises over the top of the cake tin then it, and the almonds, may colour too quickly.
The sponge and meringue layers for Nigella's Lemon Meringue Cake are similar and it would be possible to use these instead, if you feel more confident about making them. Just omit the lemon zest and add 2 teaspoons of vanilla extract to the sponge batter. However we suspect if you have success with this cake then the Strawberry Meringue Layer Cake should also work out well.
