Sugar In Scones

Full question

All other scone recipes I have seen and baked have sugar in them but not the recipe for Lily's Scones. Why is that? I thought you needed sugar for sweetness.

Nigella's recipe for Lily's Scones (from HOW TO BE A DOMESTIC GODDESS) is a recipe that was passed on to Nigella, and Nigella has stayed true to Lily's original recipe as they are some of the best scones that she has ever eaten. They do not contain sugar but if you eat them with jam, or even syrup and cream, then you are unlikely to notice. Lack of sugar also means that the scones could be used as a quick bread, to serve with something like soup. Useful if you suddenly find that you don't have enough bread in the house.

If you did want to add some sugar then we would suggest stirring in 2 tablespoonfuls of caster (superfine) sugar after you have rubbed the fat into the flour and before you add the milk. Adding sugar will make the scones brown slightly more quickly, so do keep an eye on them in the oven.
