Full question
I want to make Nigella's Queen of Puddings but I have someone who is allergic to lemon. Is there anything I can use in place of the lemon?
Our answer
Nigella's Queen Of Puddings (from AT MY TABLE is a slightly more luxurious version of the British favourite, as it uses brioche crumbs instead of regular white breadcrumbs. The crumbs are baked in a custard that is flavoured with vanilla and lemon.
You can just omit the lemon and add a few drops extra of vanilla extract to the custard. You can add 2 teaspoons of warm water to the jam to help to thin it slightly, or just warm the jam in a saucepan until it is soft enough to spread easily over the tender custard. If you do want a slight citrus note then you could use orange instead of the lemon. Seville orange would be a particularly good if they are in season and you have some, but a regular sweet orange would also be fine.
