I would like to make Nigella's Onion Tart recipe, but I need a non-alcoholic suggestion to substitute for marsala. Thank you .

Nigella's Onion Tart (from HOW TO EAT) is a quiche-like tart that is made with onions that have been slowly cooked until soft and caramelised. During this cooking process, marsala is added to the onions as the fortified wine provides flavour and a touch of sweetness.

If you can't use marsala then we would suggest adding 4 tablespoons of good chicken stock (or vegetable stock if you need the tart to be vegetarian) and a pinch of dark brown sugar. The stock adds a little extra moisture and flavour and the sugar adds a tiny touch of sweetness as well as helping the onions to cook to a deep brown caramelised tangle.
