Full question
For the Rhubarb And Custard trifle, can the red vermouth be substituted for something else or even a non-alcoholic option, to make it small kiddie friendly?
Our answer
Nigella's Rhubarb And Custard Trifle (from COOK, EAT, REPEAT) puts a traditional favourite British combination into trifle form. As the rhubarb bakes it creates syrupy juices, which are mixed with red vermouth and used to moisten the trifle sponges.
If you don't have red vermouth then you could use an orange-flavoured triple sec liqueur, such as Cointreau. Liqueur has a higher alcoholic content than than vermouth, so you may prefer to use less (about 90ml/1/3 cup) liqueur and make up the remainder with fresh orange juice. If you want to avoid alcohol then we would suggest using all (175ml/3/4 cup) orange juice instead of the vermouth.
