What Milk Should I Use In The Honey Cake?

Asked by Peppermintkat. Answered on 12th January 2025

Full question

I'm going to make the Honey Cake, but I'm wondering what milk is best to use. I usually use oat milk for most recipes and it seems to work fine, but wondered if I'd be safer using real milk in this cake? And if so should I use skimmed, semi skimmed or whole milk? Thank you.

Our answer

Nigella's Honey Cake (from FEAST) is a lightly spiced cake that is served with a butterscotch sauce. The cake is an easy melt and mix recipe and the cake batter is quite liquid as this helps to make the cake moist and squidgy.

Milk is added to the cake batter and although Nigella does not specify the type, if you are using cow's milk then we would use full fat (whole) or semi skimmed (reduced fat) milk. We would avoid using skimmed (fat-free) milk as it is too watery. There is no particular reason why you could not use a plant-based milk, but we would suggest using a milk that has a fat content of between 1.5% and 4%. Also, if using a plant-based milk then make sure that it is unsweetened.
