Why Use A Baking Sheet For Dark And Sumptuous Chocolate Cake?

Asked by Merih. Answered on 30th January 2022

Full question

The method for the Dark And Sumptuous Chocolate Cake says that I should pop in a baking sheet when I turn on the oven. However, the recipe does not seem to use this baking sheet, as it is not mentioned anywhere else. Is it this warmed up baking sheet that is to be used as parchment for the spring form, in order to quicken the cooking of the mixture?

Our answer

Nigella's Dark And Sumptuous Chocolate Cake (from SIMPLY NIGELLA) is a vegan chocolate cake that will delight both vegans and non-vegans. The cake is baked in a springform pan and the pan should be put onto the hot baking sheet in the oven.

The baking sheet has a dual purpose. The immediate heat from the baking sheet helps to heat up the springform pan quickly and this helps the cake to rise. Eggs provide leavening, and without the eggs the extra heat gives the raising agents an extra boost. Also, the cake batter is quite liquid and we have found that not all springform pans are completely watertight. So the baking sheet will catch any drips that may leak from a pan that doesn't quite seal completely.
