Full question
Will the Forgotten Pudding recipe work in an electric oven without a pilot light or do I have to put it on "low" and, if so, for how long?
Our answer
Nigella's Forgotten Pudding (from NIGELLA EXPRESS) is a meringue that is left overnight in an oven that is preheated and then left to cool. The meringue bakes to a soft marshmallowy texture in the residual heat of the oven.
The recipe should work in all types of oven as a pilot light is not needed. The oven needs to be preheated and then switched off once the meringue is put inside the oven. This gives a just set outside but a soft centre. You would only use an oven with a pilot light on if you were making crisp meringues and wanted them to dry out over a long period of time and that is not necessary for the Forgotten Pudding. However, we would mention that if you have wet or humid weather (or a steamy kitchen) then the meringue for the Forgotten Pudding can be a little sticky as the sugar will attract moisture from the air.
