Full question
I have made Nigella's Winter-Spiced Vodka. Do I decant and take the spices out or do I leave them in until Christmas? I made this 6 weeks ago. Thank you.
Our answer
Nigella's Winter-Spiced Vodka (from NIGELLA CHRISTMAS) steeps dried red chillies, coriander and cumin seeds, cardamom pods and cinnamon sticks in vodka. The spices flavour the vodka, making it perfect for cocktails, or to give as a gift in a decorative bottle.
We would suggest letting the vodka and spices stand in a cool, dark place for at least 4 weeks. Beyond that, it really depends on how strong you would like the spicing to be, so we suggest tasting a small amount of the vodka. If it is spicy enough for you then you can strain it and return the flavoured vodka to the bottle without the spices. If you prefer it to be a little punchier, leave for 2 more weeks and taste again. You can also leave the spices in the bottle if you want to give it as a gift, as they do look beautiful floating in the vodka, and suggest that the lucky recipient strain it when they want to use it.
