This is the cake that I bought a new set of plates for. The texture of this cake is lovely, either on its own or indulged with something on the side. We had it with creme fraiche, ginger ice cream, thick jersey cream, although not all at the same time. The apricots added so much flavour and natural sweetness to the cake. We even got away with just half the amount of sugar.
