This months cook-a-long theme was perfect as the mouthwatering apricot cake is gluten free. My mum is gluten free so she can’t have many of my treats but this she could and she loved it. My cake varies to Nigella's as I drizzled a lemon icing along with the fragrant apricot glaze, which I added a tiny drop of rose water to as it is quite potent. Also, as I love all nuts, besides the pistachio I tossed in some toasted almonds and scatted them on top too. I served my cake with some loosely whipped cream, but I think Crème Fraiche would have been a nice addition also.
