Victoria Sponge baked on Coronation Day, to gain height I allowed the butter to really soften before beating added the sugar and continued until it was light and fluffy and the colour had changed to almost white before adding my eggs gradually. I baked using baking band to achieve a flat even rise and then pipped the filling added the jam and gently placed the top. A sprinkle of icing sugar to finish.
