I wanted to make the cheesecake fun & smashable and thought of the brulee'd top. The thin layer of lightly burnished sugar complimented the sweet, earthy maple perfectly. And it was super fun to tap and crack! Plus it added another layer of texture to the sensualness of the cake itself!
