
The American author Susan Branch is attributed with saying “I could never in a hundred summers get tired of this”. I don't know for certain what she was referring to but there is a good chance it was Nigella's summer pudding. I used a few frozen berries to complement my insufficient punnets of fresh berries. I let juice drip on my fingertips when I used my rediscovered cherry stoner which hasn't been out of the kitchen drawer for a while. Instead of water I generously measured in Raspberry liqueur (Edinburgh Gin Distillery) with the simmering fruits and sugar. Inspired by Nigella's final instruction to “slice” …. ”rather like a cake” I built layers in a lined cake tin hoping it would turn out great! Excuse my pun. It absolutely did. This might just be my favourite dessert.
