It was -4°C this morning, so summer is definitely a long way off here downunder in Australia! But there was no way I was going to miss out on this month’s Cookalong! So I turned Nigella’s luscious Summer Pudding into mini Winter Pudding Sandwiches for just the two of us, halving the filling by using a packet of frozen Ruby Fruits (redcurrants, cherries, strawberries) which I spiced with warming cinnamon, star anise, orange peel, vanilla, and a cheeky splash of Australian “Bundy” rum. Rounds of sliced white bread soaked lightly in the fragrant cooking juices sandwich the drained lightly stewed fruit, which I sweetened with brown sugar for a more wintery caramel taste. We loved how the fruit glistened between the liquor-soaked bread layers - a match for the gold leaf I dabbed on top! Thank you, Nigella, for bringing us the perfect “Christmas in July” celebration dessert!
