For a Christmas theme, I used rosemary, cherries and blackberries to make a wreath. Some cherries and rosemary were frosted, using eggwhites and caster sugar to give a snow like effect. The ermine icing was easy to make, giving a cream cheese like texture. Delicious light and fluffy cake that lasted well in the fridge.
