Since I am in Australia at the moment, and eating (of course) such wonderful food there, I really wanted to find an Australian book for CookbookCorner. I was beginning to fear I’d never find one in time as my schedule so far hasn’t given any time for mooching around a bookshop, but providence provided. That’s to say, I was giving a talk hosted by the Sydney Herald at one of Matt Moran’s restaurants, Chiswick in Woollahra (I’m still thinking about the gorgeous fried chicken and roast lamb I ate there) and grabbed a copy of his latest book Matt Moran's Australian Food: Coast + Country on my way out. I’ve been feasting on its pages ever since. I love his food: it’s relaxed, full of flavour and accessible; he may may be a chef with a huge number of restaurants, but Matt Moran has the heart of a home cook.
Despite my sunphobia, it’s the Australian beach vibe that pulls me in with such particular force, and so I had to bring you now both this beautiful picture of lapping waves, and the recipe for Fish Burgers that reminds me of eating in his North Bondi Fish place. I’ll be making this as soon as I’m back home.
