This week’s CookbookCorner comes from Italy by way of New Zealand, allying two cultures that prize seasonality and simplicity at the table, in the form of Bri DiMattina’s deliciously inviting Nostrana. The recipe I've chosen from it to share with you today, I’m delighted say, is the Spiced Apple Cake, an excellent use for any apples that may be languishing slightly past their best in your fruit bowl!
