Thought I should include this here, as it was the first meal I ever cooked for my husband. It is easy and slurpingly lovely! Just the kind of pasta you want to take to bed with you at 3AM!

Ingredients

Serves: 2

Metric Cups
  • 225 grams spaghetti
  • 1 tablespoon olive oil
  • 45 grams feta cheese (crumbled)
  • salt
  • fresh coriander (to garnish)
  • 150 millilitres double cream
  • 75 millilitres brandy
  • 65 grams smoked salmon
  • 1 pinch of cayenne pepper
  • black pepper (freshly ground)
  • 1 tablespoon fresh coriander (chopped)
  • 7⅞ ounces spaghetti
  • 1 tablespoon olive oil
  • 1⅗ ounces feta cheese (crumbled)
  • salt
  • cilantro (to garnish)
  • 5 fluid ounces heavy cream
  • 3 fluid ounces brandy
  • 2¼ ounces smoked salmon
  • 1 pinch of cayenne pepper
  • black pepper (freshly ground)
  • 1 tablespoon cilantro (chopped)

Method

Spaghetti With Smoked Salmon is a community recipe submitted by Banana Pancakes and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Cook the spaghetti in lightly salted water with 1/2 tbsp olive oil, until tender, but with a bite. Drain the pasta, and toss with the remaining olive oil. Set aside, remembering to keep warm.
  • Pour the cream into a small saucepan and bring to simmer.
  • Pour the brandy into another small saucepan until simmering. Let neither pan boil!Remove both pans from heat and combine.
  • Cut the smoked salmon into strips and add to the cream mixture. Season with cayenne and black pepper.
  • Just before serving, stir in the chopped, fresh coriander.
  • Transfer the spaghetti to a serving dish, pour the sauce over, tossing thoroughly.
  • Scatter the crumbled feta on top and garnish with yet more coriander (you can substitute this with parsley if coriander does not appeal). Serve immediately.
