Fry prawns, garlic and chilli in the oil for 1 min. Add 2 good shakes soy sauce and stir for 1 min. Add stock bring to boil. Add lime juice, leeks, pak choi and coriander and stir for 2 min. Add the noodles/rice, stir and cook for 1 min.

Wonderfully hearty soup to have any time of the year, the recipe was given to me by a colleague. Really quick and easy and could even be made with chicken or pork!

- 1 chilli (finely chopped)
- 2 cloves garlic (finely chopped)
- 2 leeks (sliced thinly)
- 1 pak choi (washed with leaves separated)
- 2 handfuls prawns (diced)
- ¾ litre chicken stock
- 1 lime
- soy sauce
- oil (to stir fry)
- 250 millilitres cooked rice (or noodles)
- 1 bunch fresh coriander
- 1 chile (finely chopped)
- 2 cloves garlic (finely chopped)
- 2 leeks (sliced thinly)
- 1 baby bok choy (washed with leaves separated)
- 2 handfuls shrimp (diced)
- 1⅕ pints chicken broth
- 1 lime
- soy sauce
- oil (to stir fry)
- 9 fluid ounces cooked rice (or noodles)
- 1 bunch cilantro
