Ingredients

Serves: 12 cookies

Metric Cups
  • 55 grams unsalted butter
  • 50 grams caster sugar
  • 50 grams dark brown muscovado sugar
  • 1 teaspoon vanilla essence
  • 1 large egg
  • 20 millilitres chilli sauce
  • 75 grams plain flour
  • 40 grams cocoa
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon nutmeg
  • 100 grams white chocolate chips
  • 1⅞ ounces unsalted butter
  • 1¾ ounces superfine sugar
  • 1¾ ounces dark brown sugar
  • 1 teaspoon vanilla essence
  • 1 large egg
  • 1 fluid ounce chilli sauce
  • 2⅔ ounces all-purpose flour
  • 1⅖ ounces unsweetened cocoa
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon nutmeg
  • 3½ ounces white chocolate chips

  • cream together butter, sugar and vanilla
  • beat egg, and add to mix with chilli sauce
  • separately sieve together flour, cocoa, salt, baking powder and nutmeg, then stir in choc chips
  • two tbsp at a time, add dry to wet ingredients and stir well until glossy
  • place in preheated oven (180C) for ten minutes, and remove when still slightly squidgy
