Introduction

This is a really simple and quick (and yummy) pudding from Sainsbury's Magazine (UK). It can be a bit wetter than your usual crumble but this is not a problem. Put any leftovers in the fridge and it will chill to a delicious pear/chocolate/crumbly gunge which you can eat sneakily the next day

Ingredients

Serves: 4

Metric Cups
  • 5 pears (peeled, cored and chopped)
  • 95 grams soft light brown sugar
  • 100 grams plain chocolate chips
  • 1 lemon (juice of)
  • 1 teaspoon lemon zest (grated)
  • 95 grams plain flour
  • 95 grams granulated sugar
  • 95 grams butter (chilled and diced)
  • 5 pears (peeled, cored and chopped)
  • 3⅓ ounces soft light brown sugar
  • 3½ ounces plain chocolate chips
  • 1 lemon (juice of)
  • 1 teaspoon lemon zest (grated)
  • 3⅓ ounces all-purpose flour
  • 3⅓ ounces granulated sugar
  • 3⅓ ounces butter (chilled and diced)

Method

  • Preheat oven to 180 C (gas mark 4).
  • Combine the pears, brown sugar, half the chocolate chips, lemon juice and zest.
  • Divide the mixture between 4 x 250ml greased ramekins (or, if you are like me, one big bowl which looks the right size for 4 people).
  • Rub together, with your fingertips, the flour, granulated sugar and butter until the mixture resembles breadcrumbs and starts to clump together. Or pulse in the food processor until just combined. Stir in the remaining chocolate chips.
  • Divide the crumble mixture between the ramekins (or dump in the bowl) and press down slightly. Place on a baking sheet 7 bake for 35-40 minutes, or until golden and bubbling. Serve with custard, cream or ice cream...

    • I really enjoyed making this - I think my colleagues agreed as it was gone in minutes! You were right in saying it was wetter than most crumbles, so I didn't use all of the lemon juice. (About 3/4) Thanks for the recipe!
