Garlic Focaccia

Dissolve sugar and Yeast in 1 cup warm water in a large bowl Let stand 5 minutes Stir in fine sea salt Add flour, stirring to form a soft dough Knead dough until soft and elastic Place dough in large bowl coated with cooking spray, cover and let rise for 45 mins Heat oil in a small pan over medium heat Add garlic and cook for 5 mins or until fragrant Remove from heat and remove garlic slices, Discard garlic Place dough on a baking sheet coated with cooking spray Pat into a 12x8' rectangle Brush oil over dough and sprinkle with chosen herb Cover and allow to rise for 25 mins Preheat oven to 210c Use fingertips to create small indentation on focaccia Sprinkle evenly with coarse sea salt Bake for 14 mins or until lightly browned
Introduction
I originally found this recipe someplace when I was asked to make a garlic bread for the meal. Being me, I couldn't use a simple recipe, so this came about.

- 1 teaspoon sugar
- 2¼ teaspoons dried yeast
- 1 cup water
- ½ teaspoon sea salt
- 2 cups all-purpose flour
- 1 tablespoon olive oil
- 2 cloves thinly sliced garlic
- 1 tablespoon chopped fresh herbs
- ¾ teaspoon sea salt

Additional Information
Some good herbs are Rosemary, Thyme, Oregano, etc. Also, a little finely grated parmesan does wonders.
