Ingredients

Serves: 36

Metric Cups
  • 100 grams caster sugar
  • 220 grams butter (softened)
  • 220 grams self-raising flour
  • 4 tablespoons cocoa powder
  • 3½ ounces superfine sugar
  • 7¾ ounces butter (softened)
  • 7¾ ounces self-rising flour
  • 4 tablespoons unsweetened cocoa

Method

  • Preheat oven to 190ºC / 375ºF / Gas 5. Cream sugar and butter. Sift flour and cocoa powder together and add to butter mixture. Mix well.
  • Using floured hands, roll quite small amounts of mixture into approx 36 balls.
  • Place well apart (to allow for spreading) on a lined baking sheet and squash slightly to make a squat flat circle. Bake for 8 minutes.
  • Leave to cool in tin for 5 minutes, then place on a cooling rack.

    • Quite a dry, crumbly biscuit. Baked for 12 minutes as I saw someone recommended bake for 15 (my oven is quite new so very hot and they'd started 'catching' around the edge). Next time I may try reducing the amount of flour to allow for the cocoa powder.

    • These are my go-to biscuits for my grandson who has an egg allergy. Sometimes I replace the cocoa with 2 tablespoons each of custard powder and rice flour - this gives a lovely vanilla shortbread-like biscuit. I've also added lemon zest or currants or lavender for a different option. A great, versatile recipe. Thanks for posting it here.

    • Also, add an egg to soften the mixture. It helped as well.

    • My cookies are still very soft after baking for 8 minutes...is that the right consistency to take out of the oven?
