One of the yummiest most moreish chocolate recipes I have made!! Resist if you can...

Ingredients

Serves: 20

Metric Cups
  • 175 grams butter
  • 165 millilitres caster sugar
  • 4 tablespoons cocoa
  • 2 tablespoons desiccated coconut
  • 1 medium egg
  • 165 millilitres sultanas
  • 165 millilitres nuts
  • 250 grams digestive biscuits (or similar)
  • chocolate ganache
  • coconut
  • 6 ounces butter
  • 5⅘ fluid ounces superfine sugar
  • 4 tablespoons unsweetened cocoa
  • 2 tablespoons unsweetened shredded coconut
  • 1 medium egg
  • 5⅘ fluid ounces golden raisins
  • 5⅘ fluid ounces nuts
  • 9 ounces graham crackers (or similar)
  • chocolate ganache
  • coconut

Method

Chocolate Hedgehogs is a community recipe submitted by Casscat and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Heat butter, sugar and cocoa until cocoa dissolves (I actually cheated and did this step in the microwave, taking it out and stirring every 30 seconds for about 3-4 minutes, that way you only need one bowl to make the whole recipe in!)
  • Add egg and mix in well Add coconut, biscuits, nuts and sultanas making sure all are mixed in well before adding each next ingredient poor mixture into a brownie tin - 28 x 18 is good but it doesn't really matter - it just depends how chunky you want the slice to be!
  • Pop in fridge for an hour (or if in a fast fix of chocolate in the freezer for half the time) ice evenly with a ganache or chocolate icing and sprinkle with coconut.
  • Leave to set in fridge for as long as you can resist!

    Feel free to add an anything that takes your fancy! Cranberries, different nuts, chocolate chunks - I'm sure it will all taste good!! (I am wanting to try it again soon with some of the butter replaced with peanut butter..mmmmm) Also, this is such an easy recipe - I barely measured anything other than the butter and it turned out just fine!
