Ham Paste
A community recipe by CobyNot tested or verified by Nigella.com
Introduction
A great way to use up leftover ham, especially around Christmas. provide quantities here as a guide only, because this is a way to use leftovers, it wouldn't be so helpful to start suggesting you need a specific amount of ham. Just work on roughly half the amount of butter to the ham by weight.

- Chop the ham in a food processor before adding the butter and mustard. Process it until everything is well combined. This will take less or more time depending on how soft (or not) your butter was to start with. It will eventually come together regardless.
- Transfer the paste into single serve dishes, or one larger dish. Smooth over the top and, if desired, pour over just melted, clarified butter which will help prevent the top discolouring.
- If you want to omit the extra fat, then simply press cling wrap onto the surface.
- Refrigerate until ready to serve.
